This month has seen me building up a repetoire of dishes using Sea vegetables. This is because they are packed full of minerals, vitamins and trace elements. For example, I don't think it's possible to find a veggie ingredient that contains as much protein, B3,B6,B12, iron, Vit E, iodine, clacium, magnesium, zinc + more as is in the amazing nori. I'm buying from a supplier on the West Coast of Ireland - I guess asking for a Leeds supplier is a big ask! I really recommend reading Prannie Rhatigan's book 'Irish Seaweed Kitchen' for inspiration.
